When I lived in Seattle, WA I would wait up to 2 hours for a table at Glo's. It was a whole in the wall with a Brunch menu that is still my gold standard. Their hash browns were legendary. I attempted to make them today. I grated Red Potatoes and used a tea towel to get some of the moisture out. I seasoned with Sea Salt, Ground Pepper and fried a pile of them in some Canola Oil on medium heat. I left them alone until crisp brown. They were pretty good, but not as light as Glo's. Maybe I should use Butter instead of Oil. Maybe I should use a different kinda Potato too. Next time I'll mix it up.
